• Stability

The Bulk Lycopene Powder molecule has 11 conjugate double bonds and 2 non-conjugated double bonds, so the stability of lycopene is relatively poor, and cis-trans isomerization and oxidative degradation can occur under certain conditions. Lycopene is sensitive to oxidation, and after 12 hours of sunlight exposure, lycopene in the solution is basically lost. Fe3+ and Cu2+ in the solution will catalyze the photooxidation reaction of lycopene, while other metal ions such as K+, Mg2+, Ca2+, Zn2+, etc., have little impact on it, so the use of iron and copper containers should be avoided in the extraction and application process of natural lycopene. pH value also has an effect on lycopene. When lycopene is dissolved with ethanol and adjusted to pH value 1 ~ 14, the results show that lycopene is unstable to acid and stable to base, so lycopene is not suitable for acidic drinks when used as a pigment. It can be seen that the factors affecting the stability of lycopene are aerobic, light, metal ion pH, etc., so the extraction, storage, processing and analysis of lycopene should be carried out under the condition of controlling environmental factors.

The solubility of lycopene in various solvents increases with the increase of temperature, but the more pure the sample is, the more difficult it is to dissolve. Crystallized lycopene dissolves slowly and tends to form a supersaturated state, although increasing the temperature can accelerate its dissolution, but crystallization may occur when it is cooled, and ultrasound can be used to accelerate its dissolution. Pure lycopene, although insoluble in water, has a high solubility when it combines with certain substances such as proteins to form complexes.
