The calorie content of stevia extract is extremely low, almost negligible. For those who want to control their calorie intake, such as weight loss enthusiasts or those who need to control their weight, using stevia extract can help them enjoy the deliciousness of baked goods while avoiding excessive calorie intake.

Stevia extract does not cause a significant increase in blood sugar levels. Its main component stevioside is not absorbed in the human gastrointestinal tract, but is directly discharged from the body, which makes it a safe sweetener for diabetes patients to use, to meet their desire for sweet food, and to control blood sugar well.

Stevia extract has a high sweetness, usually 200-300 times that of sucrose. During the baking process, only a very small amount needs to be added to achieve the desired sweetness.

Stevia extract has good chemical stability in high-temperature baking environments. It does not undergo caramelization or Maillard reaction at high temperatures like sucrose (although this may affect the color and flavor of baked goods in some cases, it can be adjusted through other methods), which means that during long-term baking or high-temperature baking, stevia extract can maintain its sweet taste characteristics without producing odors or losing its sweetness.

  • Mix all the dry ingredients in a large bowl. In another bowl, mix all the liquid ingredients (including mashed bananas).

Whole wheat stevia toast

Ingredients: 100g whole wheat flour, 200g high gluten flour, 4-5g stevia, 170-180g milk, 4g low sugar yeast, 30g egg mixture, 20g butter, 2g salt.

Step:

  • Put the ingredients other than butter into the bread machine, knead for 10 minutes first, then add butter and continue kneading for 20 minutes.
  • The kneaded dough can be stretched by hand to make it very thin and have good extensibility.
  • Then continue to knead the dough and put it into the bread maker for the first fermentation. After 1 hour of fermentation, it will be twice the size of the original dough.
  • After the first round is over, continue kneading the dough to make it smooth, exhaust it, cover it with plastic wrap, and continue to let it rise for 15 minutes.
  • Weigh the dough and divide it evenly into three pieces. Roll the dough into a tongue shape, with one side thinner, and then roll it up with the thinner side at the bottom.
  • After completion, place the dough into the mold and place it in the oven. Place a bowl of water in the oven to maintain humidity, and the oven temperature should not exceed 30 degrees Celsius. Let it ferment for 40 minutes.
  • When the fermentation reaches 9 minutes of the mold, cover it with the mold cover and preheat the oven to 180 degrees on high and low heat. Bake the middle and lower layers for 35 minutes. If no lid is added, tin foil can be added after coloring.
